Gluten & Dairy Free Superbowl Tips and Recipe Ideas!
Super Bowl Sunday is just around the corner and whether you are entertaining a crowd of guests or just your immediate family, I have a few gluten and dairy free recipes that are sure to please.
It is no secret that I am not a huge fan of football, but I don't mind cooking fun foods for my husband to enjoy while he watches a big game.
Party Tips and Tricks:
If possible, I suggest entertaining on your own turf. This allows you to have more control over safe foods. I find that I am more relaxed when I entertain at home because I do not have to be as concerned with cross-contamination.
I also try to make things that require as few "specialty" ingredients as possible. Apart from the pizza ring, most of my other recipe suggestions require items from the regular grocery store that are gluten and dairy free.
I like to have hearty appetizers. I have always been a fan of tapas style menu items because it allows people to taste and graze. I tend to have a main item and multiple appetizers like the ones below.
Crockpots can be a person's best friend during the Superbowl because it cooks the food, keeps it warm for service and is easily accessible. Chili, pulled pork, and homemade meat balls make great gluten and dairy free menu items that are cheap and easy to adapt to almost any dietary restrictions.

Anytime I entertain, I think it is important to have a fresh fruit and fresh vegetable platters. I like snacking on fruit and vegetables and I like giving my guests a healthier option as well. Even though it is the Super Bowl and there are lots of fun foods that people are going after, the fruit and veggie platters are empty by the end of the game.
Gluten and Dairy Free Pizza Bubble Ring
Before my Celiac diagnosis, I used to make this recipe for football get togethers that my husband and I used to have at our house. Everyone always loved it because although it is easy to make, it looks like you put forth more effort than you actually did. People also enjoy pulling it apart. Since I am allergic to dairy, I would follow the recipe, but would use non-dairy cheese and butter for my portion. I recently made this using gluten free biscuit dough (bisquick is another option), non-dairy butter and non-dairy cheese and it was pretty good. You may decide to make both the original recipe and an allergy free version.
Italian Chicken Spirals
These are easy to make and eat. These can even be made the night before and reheated before serving. I have always make them in the broiler on a baking rack and they come out beautifully. I suggest you soak your bamboo skewers in water overnight to prevent the skewers from burning like in the picture above :).
Gluten and Dairy Free Taquitos

Gluten & Dairy Free Nachos
Nachos are fun to eat, and with the addition of tasty black beans, these are also quite satisfying. If I am entertaining people who do not have dietary restrictions, I make a batch with regular cheese and a special batch for myself using vegan cheese. I used this recipe from Allyou magazine. Of course I use non-dairy cheese and I do not use the yogurt. These are awesome with guacamole. You can also feel free to use your favorite recipe. If you want to include poultry or meat, shredded chicken, ground turkey, or ground beef all make wonderful toppings
For Dessert...
Individually portioned desserts that are finger friendly are a must in my opinion. Football fans like to plate, eat and watch the game.

I used a gluten free Koala Crisp cereal to make rice treats. I make the recipe the exact same way that I would make rice krispies treats, but using Earth Balance instead of the butter. I melted gluten and dairy free chocolate chips and drizzled it on top. Very, Very tasty and everyone, especially adults will thoroughly enjoy these.

Cookies are always a great treat. A plate or platter full of cookies is fun and inviting. Gluten free sandwich cookies, chocolate chip cookies, coconut raisin cookies, sugar cookies are a few suggestions. The possibilities are endless.

Cupcakes are perfect for parties! I love decorating cupcakes. Your cupcakes can be plain like this one or adored with mini footballs of the colors of your favorite team. The cool thing about cupcakes is that you can set up a cupcake bar, leaving out icing and toppings so everyone can be free to decorate themselves. I have done this myself and everyone had a ball! Some topping ideas include: crushed up gluten and dairy free cookies, nuts (if no one has an allergy),gf, df chocolate chips, gf sprinkles, colored sugar, gf, df, candy etc. You can make different flavored cupcakes with different flavored and colored icing!
